Wow, it has been hot, hot, HOT this week! The sunny weather and endless heat has me seriously craving things that are cold and fruity. And, I have been so grateful to have some sugar-free blueberry lemon popsicles in my freezer! They totally satisfy that craving – in a healthy and low carb way.

So far, my favorite homemade ice cream recipe has been this sugar-free low carb ice cream. The only downside is, my dairy-free readers can’t enjoy it. So, when I had the opportunity to partner with So Delicious Dairy Free and Go Dairy Free to create a dairy-free low carb popsicles recipe for the #FrozenFridays Recipe Contest, I was excited to participate!

These sugar-free lemon blueberry popsicles are my contribution to the contest. You’ll be able to vote for my recipe here starting August 6th, but trust me when I say you won’t want to wait that long to make these keto popsicles!

I’m not usually one to buy pre-packaged products. Most of the time, they are filled with additives, preservatives, and added sugar. These are definitely things I strive to avoid!

That’s why I was thrilled to discover So Delicious Dairy Free frozen desserts with No Sugar Added. They are made with coconut cream, and sweetened with chicory root extract, erythritol, and monk fruit extract. Just perfect – I’m a big fan of all those sweeteners!

Even though my family is not dairy free, we probably consume more dairy than we could or should be. Finding dairy free alternatives for foods like ice cream – that actually taste good – is always a plus! I already use coconut milk and coconut cream in paleo recipes regularly, so a dairy-free dessert made with coconut cream fits right in.

Even though this low carb ice cream is awesome on its own, I decided to get a little creative with it by using it in a recipe. And since it’s summer, what better way to use it than by making some low carb sugar-free popsicles?

These blueberry lemon popsicles are probably one of the easiest sugar-free desserts you can make. It takes just a few minutes. Whirl all the ingredients (all four of them – ha!) together in a blender, pour into popsicle molds, and freeze. Simple and easy.

They happen to be extremely light, too. Only 32 calories and 6 grams net carbs per popsicle! I love that for summertime especially.

These are my favorite popsicle molds for making homemade sugar-free popsicles. They are affordable, non-stick, easy to clean, and come in fun colors. Plus, the built-in drip guard minimizes the mess when you’re eating.

Just before serving these sugar-free popsicles, simply run the molds over warm water to loosen them. They come right out effortlessly. Hooray for dessert in no time at all!

That’s probably the best thing about these homemade blueberry lemon popsicles. They are ready to go when a frozen dessert craving strikes. Make them in advance and keep them in your freezer. They’ll be waiting for you when you’re ready for ’em!
